Amazing Pad Thai

 

Ingredients (serves 4):

  • 1 package egg noodles

  • ½ cup peanut butter (Crunchy is great)

  • ½  tbs. sesame seed oil

  • 1 tbs. soy sauce

  • 1 tbs. butter or margarine

  • ½ lemon

  • 1 lime

  • 1 tsp. sugar

  • ¼ cup of cashew halves

  • Tofu

  • 2 onions

  • Green and red peppers

  • Mushrooms

  • Hot pepper flakes (crushed red chili peppers)

  • Green onion (for garnish at the end)

  • Sesame seeds (for garnish at the end)

  • Fresh and juicy mango slices (for garnish at the end)

 

Directions

  1. To prepare the tofu, drain from package, slice in ½ inch slices, place in colander with a plate on top and a can for weight – allow to drain for about 30 minutes.

  2. Prepare egg noodles according to package directions and set to the side when done.

  3. Cut onions, mushrooms and peppers into bite sized pieces.

  4. Fry onions until caramelized, then add peppers and then mushrooms.

  5. Add peanut butter, sesame seed oil, soy sauce and butter.

  6. Add hot pepper flakes to taste and salt/pepper.

  7. Add sugar.

  8. Stir until combined.

  9. Combine the cooked egg noodles with the fried vegetables and peanut sauce.

  10. Add cashews.

  11. Add the juice from the lemon and lime.

  12. Cut the tofu into ½ inch cubes and combine.

  13. Set into a dish and garnish with mango, finely chopped green onions and sesame seeds.
